Waipara Springs Winery and Cafe is located in the warm dry Waipara district north of Christchurch. The wines have been enjoyed both in New Zealand and internationally since the winery opened in 1990.
The vineyard
The original planting of 4ha of Chardonnay vines in 1982 has been expanded and there are now 26 hectares (65 acres) of grapes in production in the Waipara Springs vineyards. The varieties grown now include Sauvignon Blanc, Riesling, Pinot Noir, Merlot, Chardonnay and Gewurztraminer.
The soil type at Waipara Springs is ideally suited to quality grape production having very high levels of limestone, which results in high soil pH.
The winery
Waipara Springs is dedicated to quality and because all the grapes are grown on the property, there is careful quality control from the vine to the bottle. New French oak barriques are purchased each year and the winery upgrades its equipment regularly along with additional equipment to cater for increased production from the younger vineyards. This policy has provided rewards with Gold, Silver and Bronze medals in both National and International wine competitions. Winemakers Frank Manifold and Rebecca Cope together have many vintages both overseas and locally.
The wine bar and cafe
The cafe offers a wonderful array of tempting dishes using as many local ingredients as possible, including salmon, lamb, cheese, asparagus and many other seasonal fruits and vegetables, not to mention the famous homemade bread.
Wine tastings are available with an informative and friendly commentary on all the wines available and the history of the company.
